Grilled Salmon on Bed of Microgreens, with Walnut Avocado Toast

Ingredients

- 2 salmon fillet

- 2 tablespoons of olive oil
- Salt, paprika, pepper, onion powder
-lemon


Microgreens Salad
-2oz of Sunflower Microgreens
-2oz of Spicy Mix Microgreens
-1oz of Radish Microgreens
-1oz of Pea Shoots Microgreens
-1/4c Applewood Bacon Pieces
-Sprinkle of Parmesan Cheese


Avocado Toast
-2 slices of 9 grain Bread
-1 avocado
-Chopped Walnuts

Directions
1. Mix ingredients of Microgreens Salad, set aside
2. Take a very sharp knife to slit parallel lines halfway deep into the fillet, about 1 finger width apart
3. Sprinkle seasonings into each cut
4. Heat olive oil in a pan over medium heat
5. Once oil starts to smoke, put the fillet, skin side down, into the pan.(don't touch it!) for a few minutes
6. Watch the salmon and flip it only when it's about 2/3 cooked
7. Once flipped, add tablespoon of butter to keep it moist, and tilt the pan for the remaining oil to coat the bottom of the fillet
8. Continue until the whole fillet is cooked and remove pan from heat
9. Flip the salmon back to the skin side, let it rest for another minute
10. Place salmon on top of Microgreens salad, squeeze desired amount of lemon over top
11.Toast sliced bread
12. Mash or slice avocado, place on toast
13. Top with chopped walnuts and enjoy!
